JBOD Format

I chose this during install as I wanted to use my full 4TB (2x2) on my new Duo V2.

When looking at them in Dashboard the drives showed up as Volume /c and Volume /d both Raid 0 Not-redundant - is that correct?

I want to ensure that when I save to a share on /c it only saves on /c not both.

Yes. If disk 1 fails, volume C will be lost. If disk 2 fails volume D will be lost. So be sure to backup any important data primarily stored on the NAS regularly (this would be recommended even if you were not using JBOD) e.g. to a USB drive

NB: A ReadyNas is not an excuse not to have a backup. Fire, theft, multiple disk failures, other hardware failure, floods, user negligence etc. can all result in loss of data.
